Destin Fishing

Next week I am headed to Destin for seven days of fishing. My buddy just bought a new 34' Pursuit walkaround and we want to get her bloody and load up the freezer. However, he is new to offshore fishing since he just moved there and I know nothing about the waters. We are looking to hire a captain to come aboard his boat and guide us. Or, can you buy a pre-loaded SIM card down there from a retailer that has fishing spots etc....? Has anyone done this before or have any recommendations.
