noob fishing shell (needed advice)

Yesterday, on my way to marshes I noticed bait activity at the bayou's mouth -- fish were busting bait so hard that I've seen flounder going airborne few times. Next to the shell (sitting in mud) there is a ~6-8' drop off. You can't simply paddle by (I never saw bait being destroyed in such fury) -- you have to stop in situation like that.

While I ended up with few decent fish I got even more frustration -- snags on every second cast. Lost some tackle, rigged jig 'snagless' -- this somewhat helped. But, apparently 'snagless' = 'so-so hookups'. On that day I ended up losing 4 big flounders (one was biggest I ever saw). I felt them shaking their heads, got them by the kayak and then they come off. Argh... Lost probably $50 worth of tackle overall during that trip.

Anyway, how do you handle shell? I.e. how do you rig for flounder/speck when they bust bait on shell? Which technique would allow spending more time fishing than re-rigging?

P.S. There is a nice knot I learned recently (canoeman loop knot). Do not use it -- jig rubs through you leader very quickly. Ended up loosing big red and expensive mirorlure thanks to it.
