Just picked up a brisket size chunk of New York strip, 12.5 lbs. certainly not prime grade by any means but I imagine it'll taste pretty good. Question us, what would be the best way to cook this? I've git a crowd coming for Christmas sic was kinda thinking of throwing it on the traeger, buts it's leaner than a brisket and won't need that long slow cook. Should I treat it similar to a prime rib, or just slice into steaks myself and grill em the old fashioned way?
