I planted a prickly pear cactus not too long ago at the house and it is doing well. I have had plenty of people ask me if I had eaten any of the pads yet. I said no. I am hearing they are good sauteed with onions in eggs, grilled, and fried.
Today I went to Fiesta to buy a watermelon and an employee was preparing cactus "nopal" by taking off the thorns and dicing them for sale. I got into a conversation with her and she said that more folks are buying cactus more than ever now. Especially for the nutritional value. She told it was good for diabetes, and loaded with fiber, vitamin B & C, and protein.
I got on the computer and found a lot of information on what she said was accurate. The information of the nutritional value was very impressive.
There are tons of recipes from making a juice to frying them.
I bought a pack and going to give it try with some saute onions, garlic, jalapenos, for a omelet and maybe try it in a juice.
I even read something that it is good for your testosterone level.
